Subsequently it is covered with a dusting of sea salt and placed in a gas-fired oven. Cooking is stopped when the tomato reaches a certain level of dehydration, such as to make it semi-dry. At the end, everything is seasoned and placed inside the jars. Manual closing and pasteurization of the product
